Potassium Nitrite is used as a reagent in the synthesis of thio-isoglobotrihexosylceramide, an agonist for activating invariant natural killer T cells. Potassium Nitrite is also used in experiments as a source of nitrites and when acidified it can exhibit antibacterial activity against Helicobacter pylori.
